You really should free feed your chinchilla, 2 tablespoons is not enough for a grown or growing chinchillas. Chinchillas will not over eat, Plenty of fresh water, plain high quality pellets and Hay.

Like Jamie said a high quality chinchilla will not likely get fleas but anything is possible. With more people breeding poor quality chinchillas, it is a little lore common for chinchillas to get fleas now

Then that breeder is very very misinformed. I only know of a very few people working with blue diamonds and only experainced breeders should mess with them, as for the beige diamond  seems like she is calling white sapphires and beige sapphires that, But if she doesn't know proper terminolgy she really shouldn't be breeing them as it is unlikely this breeder knows what she is doing. a lot of people are in it to just make money by breeding mutation to mutation to mutation

Wilson white and Mosaic same thing. It is a mosaic like Jamie said. A lot of people make up names to sell chinchillas.  Silvers are whites. I have heard champagne used to sell beiges, and Chocolates are really dark tans

You shouldn't breed a rescue female for all the above reasons. And for that reason she cannot even play with the male. Mating takes seconds a ton of people have had their chinchillas mate during playtime. No playtime

just looks like poor fur quality. I bet they have a lot of mutation in the lines. bad for a show/breeder but if it is just a pet it is fine

Light-meduim-dark is just color phase. light ebonies arepale grey all the way around and medium are darker and dark are black,  Hetero and Homo are highly debated. In the end that doen't matter

a lot of ear injuries happen at birth so you could have missed it.
